Baked | S'mores Cookie Cups

One of my best seller baked goodies, S'mores Cookie Cups.  You can never go wrong with a chocolate recipe.  The only downside of this recipe is that you have to serve it hot so that the marshmallow and chocolate are all gooey.  But I was able to solve that by popping them in the oven toaster before serving.  Which means you can make this is advance.
Here is the recipe:

INGREDIENTS:

  • 1 1/3 cup All-Purpose Flour
  • 1 1/4 Crushed Graham Crackers
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 sachet Swiss Miss
  • 1 Egg
  • 1 tsp Vanilla
  • 1/2 cup Butter
  • 1/3 cup Granulated Sugar
  • 1/3 cup Brown Sugar
  • Nutella or Hazelnut Spread
  • Marshmallows

DIRECTIONS:


  1. Pre-heat oven at 190 C
  2. Mix together Flour, Crushed Graham, Salt, Baking Soda and Swiss Miss.  Set aside.
  3. Cream Butter and both kinds of Sugar until fluffy.
  4. Add Egg and Vanilla Until Combined.
  5. Add dry ingredients and mix until the dough has come together.
  6. Using a small ice cream scoop, scoop the dough into the mini muffin pan and create a hole in the middle of each cookie dough.  Bake for 10 minutes.
  7. Upon removing from the oven, re-press the holes of the cookies.
  8. Fill the cookie cups with Nutella and place Marshmallow on top.
  9. Toast the S'mores Cookie Cups before serving for about 1 - 2 minutes or until the top of the Marshmallow is a bit brown.
